Infusions or nastoikas are made by infusing vodka in various fruits, pips, spices and aromatic and medicinal herbs. Fresh or dried fruit flesh and plants are soaked in alcohol until all the essential oils and biologically active substances are released into the alcohol.
The length of the infusion process varies from 2 to 6 weeks. If necessary, the time can be reduced to 7-10 days by raising the temperature to 50-60°C. Infusions contain up to 30% sugar at a strength of 45% abv. Spirits are less sweet, but stronger than fruit liqueurs, have a pleasant flavor and can serve as an alcoholic drink or medicinal elixir.
